I just started eating it a couple years ago and it sort of ruins other pasta sauces. At least it has for me. I do a vegan version and it's really good.

Here you go:

Here you go:

1 lb Impossible burger (or mushrooms) fried in plenty of olive oil until well-browned, then add chopped onion, celery, carrot, and garlic and fry until aromatic. Couple tablespoons tomato paste. Deglaze with a cup of dry wine (red or white), add a cup of oat milk (unsweetened), a cup of stock, a cup of crushed tomatoes. Simmer low and slow with bay and a Parmesan rind (or not or get vegan parm) until nice and thick (an hour or two). Finish with chopped parsley and basil.
